Chicken Lettuce Wraps

No bread, no problem! Who doesn't love a good lettuce wrap? We don't need all that extra bread sometimes. What's in the middle is where all the flavor is! The avocados will bring a creaminess to your wraps and the salsa to adds the "pizazz".

Here is a simple recipe for a chicken lettuce wrap and salsa:

What you Need:

1 lb Chicken breasts
1 Large Bib Lettuce
2 Avocados
1/2 Salsa
1/2 ts. Salt
1/2 ts. Pepper
1/2 ts. garlic powder
1 Tb. Olive Oil

How to Make It:

1. Wash your bib lettuce. Pat dry and pull apart the larger pieces of the lettuce suitable to wrap.

2. Season your chicken with the salt/pepper/garlic powder. Cook chicken on a medium to high skillet with the olive oil. Roughly 8-10 minutes on each side and cooked through entirely. Cut your chicken into 1-inch bite size pieces.

3. Mash your avocados with a fork until pureed. Spread the avocado mash onto the lettuce, add your chicken and salsa on top. Roll and ENJOY!

(This will also go great on a whole wheat wrap!)
