santa-fe chicken (crockpot style!)

This meal will have you enjoying the warm, hearty meals (and convenience) a crock-pot has to offer! This Santa Fe Chicken dish is simple, light-yet filling, healthy and tastes great re-heated. Not to mention it can be enjoyed with various sides; in a warm flour tortilla, sided with yellow rice or even by itself!

What you'll need:

1lb-1.5lb of chicken breast

Frozen corn-8 oz package

1 can Black Beans

Low Sodium Chicken Broth (I only use about 1/4 cup as the juices from the chicken and veggies can make this soupy)

Scallions

1 can Diced tomatoes with Chiles

Measure out the following to suit your own taste buds:

Cilantro

Cumin Cayenne

Garlic Powder

Onion powder

(Feel free to add spice/jalapeno peppers or the like to give it a kick or keep it as-is for a more mild dish)

Add everything but the Chicken to crock-pot first. Then lay chicken on top of mixture. Cook on High 4-6 hours or lower heat for up to 8 hours. Shred chicken with forks when ready to serve. Hope you enjoy!
