Shrimp And Veggie Pasta

This recipe is perfectly measured for two so you may need to adjust measurements to accomodate more mouths!

This dish has a small kick with the crushed red pepper flakes, but as with any meal, you can add more or take out to accomodate your own taste buds! Another great part of this one, it's easy on the budget!


3 oz uncooked angel hair pasta (whole wheat, please)
1/2 lb. uncooked shrimp (approx. 16-20 per lb.), peeled and deveined
1/4 tsp. salt
1/8 tsp. crushed red pepper flakes (I used a little more for the flavor)
2 Tbsp. olive oil, divided
8 fresh asparagus spears, trimmed and cut to 2 in. pieces
1/2 cup sliced fresh mushroom
1/4 cup chopped seeded tomato, peeled
4 garlic cloves, minced
2 tsp. chopped green onion
1/2 cup white wine or chicken broth
1-1/2 tsp. of each of the following:

   minced fresh basil

   minced fresh oregano

   minced fresh parsley

   minced fresh thyme

1/4 cup grated Parmesan cheese
Lemon wedges

Put it together!

1.Cook angel hair pasta according to the package directions. Meanwhile, sprinkle the shrimp with salt and pepper flakes. In a large skillet or wok, heat 1 Tbsp. oil over medium-high heat. Add shrimp; stir-fry until pink, 2-3 minutes. Remove; keep warm.

2. in same skillet, stir-fry next 5 ingredients in the remaining oil until vegetables are crisp-tender, about 5 minutes. Add white wine (or chicken broth) and seasonings. Return shrimp to pan.

3. Drain angel hair pasta; add to the shrimp mixture and toss gently. Cook and stir until heated through, 1-2 minutes. Sprinkle with Parmesan cheese. Serve with lemon wedges.
