That time of year is upon us when our grill is an enjoyable and sometimes preferred method to cooking!
Fire it up! This chicken kabob recipe is easy, healthy and very satisfying.
Listed below are some vegetables that I enjoy on my kabobs, but the awesome thing about this style meal is that you can replace or add any other veggies you have a taste for! (Not to mention the chicken’s marinade can always be changed as well, just be sure to choose “clean” ingredients.)
Let’s get started!


• 1 lb. Boneless, Skinless Chicken Breasts, cut into even pieces

• 1 Red, Green, Yellow, & Orange Bell Pepper, Chopped in large pieces

• 1 Red Onion, Chopped

• 2 ripe Zucchinis, sliced

• 1 Tbsps Fresh Lemon Juice

• 3 Tbsps Avocado Oil, or Olive Oil

• 2 Tbsps dry Italian Seasoning

• 1/2 Tbsp Garlic Powder

• Pinch of Sea Salt and Pepper

Put it together!

1. Place the veggies in a bowl and add 2 Tbsp of olive oil and 1 Tbsp Italian seasoning. Season to your taste then toss well to get all pieces coated.

2. Place the chicken in bowl with the remaining oil. Season with sea salt and pepper and add garlic powder and 1 Tbsp Italian seasoning. Mix to combine.

3. Heat the grill to high heat.

4. Soak your wooden skewers in water for 20-30 minutes minutes while your chicken, and veggies marinate in the fridge.

5. Alternate between veggies and chicken on the skewers until everything is used.

6. Turn the heat down to medium heat, spray or grease the grill if needed, and add the kabobs.
7. Grill for 2-3 minutes, turn and repeat until each side it showing grill marks and the chicken is cooked through.

8. Serve immediately.
