Snack Box

It's that time of day when you are more than ready to eat something, anything! At this point, you want to fill that sweet/salty craving but you also know you want to fuel your body; not weigh it down. There is rarely anything healthy in that vending machine. Yeah, you could go to Starbucks and pay $10 for those fancy snack boxes. Why not do it yourself? Plus, prepping food yourself will give you exact measurements of what you are putting into your body.

You may put any measured healthy option you so desire (carrots, protein power bite, pear, etc.). What I like about this recipe is that it is colorful, good protein source, sweet (because of the apples) and has an extra little "treat" that I made myself - that muffin!! This muffin is dense, no extra white flour and still rather tasty. Best part is that is all made out of FOOD (fuel!).

Here's the recipe for the muffin:

2 ripe bananas

1 c. oats (old fashion makes it dense!)

1 egg

1/4 c. honey

1 ts baking soda

optional:

1/4 tsp vanilla extract

1/4 tsp cinnamon

chocolate chips

nuts

dried fruit bits (banana chips, dried apples, raisins, etc)

Super Easy Directions:

1. Preheat oven 350 degrees.

2. Line muffin tin with liners.

3. In a small blender (bullet, ninja blender) blend until smooth the bananas, oats, egg, honey and baking soda.

4. Fill each liner about half way full.

5. Bake for 13-15 minutes or until done.

6. ENJOY!

Other options for the snack box:

hard boiled eggs

a bunch of grapes

sliced apples (add lemon/lime juice so they don't brown!)

Peanut Butter cup (natural Jif is a good brand)
Your choice of nuts

Cheese (baby bell cheese?)

Celery

Blackberry/Raspberry/Strawberries

Wrapped Chicken in lettuce (roast a chicken)

It will give you nutrition facts and it will give you other ideas on what kind of snack options you could add to your SNACK BOX. Be creative and healthy and most important, make it what you want to eat and keep yourself happy.
