Spicy Chicken and Sweet Potato Bowls

This is very easy and basic and you can meal prep it for a week. Plus, the seasoning is great! This recipe gives you spicy and a little sweetness from the sweet potatoes. It is a win-win.

You can also add different kinds of items to the meal. Hummus, cucumbers, brown rice, etc.

2 lbs. boneless skinless chicken breasts, cut into bite-size pieces

3 Tablespoons of the following spicy seasoning mix:
1 tsp salt
2 tsp Garlic Powder
2 1/2 tsp Paprika
1 tsp Pepper
1 tsp Onion Powder
1 tsp Cayenne
1 1/4 tsp Oregano
1 1/4 tsp Thyme
1/2 tsp Red Pepper Flakes (optional)
*feel free to adjust the amount of each of these items according to your taste buds!
Olive Oil
3 sweet potatoes, peeled & diced bite-sized
5-6 cups broccoli florets (Fresh is best!)
Salt & Pepper to taste

How to:

1. Preheat oven 425 degrees.
2. Line a sheet pan with tin foil. Mix your chicken pieces and seasoning together and evenly lay them on your sheet pan. Drizzle your olive oil. Set in fridge for 30 minutes.
3. On another lined sheet pan, lay your broccoli and sweet potatoes on the sheet pan. Drizzle olive oil and salt.
4. Bake the chicken and vegetables in the oven for 12-15 minutes. Making sure chicken is cooked all the way through. Remove the chicken and broccoli from the oven but leave the sweet potatoes and them cook for an extra 15 minutes.
5. YAY - you're done. Once all the ingredients have cooked - divide among your meal prep tupperware/glassware. Place in fridge.
